The jam helps the moistness of the cake for me, also why I prefer Hotel Sacher’s Sachertorte to Café Demel’s, thanks to the extra layer of apricot jam.

The patisseries in Vienna are great. Easily comparable to French ones for me, if I dare say that to a Frenchman! I had a different cake every day from different cafés (usually the eponymous cake, so Landtmanntorte at Café Landtmann and so on).
